CONVENIENCE FOOD WITH A TWIST
Paragraph from the article: The casserole was a quick affair to make, but we were so hungry that while we waited for it to finish cooking we ate a salad of red lettuce, raspberries, goat cheese, and my favorite Signolia’s dressing.

SIGNOLIA'S MAKES THE BEST BALSAMIC VINAIGRETTE!
I am a huge salad lover, and although I do love my veggies, I have a penchant for dressings that can really make or break the bowl! Recently, I had the opportunity to try Signolia's Hand-Blended Balsamic Vinaigrette. Not only does the bottle come with it's own batch number (I love that!), but it can also be used as a dipping sauce (I'm thinking spring rolls and rustic loaves of bread, to name just a few) and/or a marinade -chicken breasts, pork loin, lamb chops, tofu steaks, roasted red peppers...! With only natural ingredients, the vibrant taste is reminiscent of Italian cobblestone streets and kitchens where homemade breads, pizzas and pastas are the norm. It is rustic Italy brought right to your table. Signolia's contains no added sodium, sugars or artificial additives or preservatives and is gluten, cholesterol, trans fat and nut free. The dressing is hand-blended and bottled, so you know that you are getting great care from Eve and Jerry Martin, the owners of Signolia's. And what I liked most about it, other than being handmade, is that it really livened up anything that I put it on, but didn't overpower the food, like some dressings can. I used it on pasta and roast vegetables and bread. Mmm. I even think at one point I was going to put it on my eggs! Then I made an organic bean salad for a party for our friends and neighbors a couple of weeks ago and used Signolia's BV on it. The next day I got 2 emails asking for the recipe!

THE BEST DAMN DRESSING IN NC
I have mentioned before that I am in love with the winery/vineyard Hanover Park. Not only do they have a great selection of French inspired wines, but they also have the only port that I know of from NC and the only dessert wine that I have ever enjoyed. They also have Signolia’s. Signolia’s is a balsamic vinaigrette made locally in Waxhaw, NC, and it is the best damn thing ever to happen to my kitchen. I have made my own balsamic vinaigrettes many a time, but they don’t taste the same. I’ve even used all the ingredients listed on the side of the bottle in an attempt to replicate the flavor, but it still doesn’t come out right. My vinaigrettes always have a brighter flavor while Signolia’s has an indescribable smoky yumminess to it that cannot be recreated. My picture shows the bottle next to a Brocolli Salad I made last night but it can be used as far more than a dressing. My most recent attempt was using it as a marinade for ostrich filets and boy was it good. It tenderized the meat and imparted a lot of the smoky flavor to it so that it almost tasted like we grilled it rather than seared it. Yum.

TALKING ABOUT BAD IDEAS
For some reasons, I had a lot of really bad ideas in the kitchen recently... and this one was a particularly bad one. Since I got my BBQ, I am grilling almost every day. Its fun and it keeps the heat outside. But some things are just better when they do not touch the grill. Broccoli is one of these. Grilled broccoli tastes awfully bitter and is truly unpleasant. Don't try this at home. Grillin Greg said... Actually, I find grilled broccoli to be great. The key is to marinate it beforehand -- I like Signolia's Balsamic Vinaigrette -- and cook it quickly, leaving it a bit al dente.

WHO'D A THUNK IT?
Certainly not Apollonaire. Somehow the thought of a zesty, gourmet salad dressing being made and bottled in Waxhaw doesn't quite compute. However that's exactly what's happening, even as we speak. Waxhaw entrepreneurs Eve and Jerry Martin have created a new, hand-crafted Balsamic vinaigrette called Signolia's. The name honors the late Signolia, an African-American caterer whom Eve Martin remembers fondly from her childhood in West Virginia. Apollonaire tried the dressing recently and found it to be not only delicious, but also addictive. It's savory rather than sweet, as you would expect from a Balsamic-based product. Don't use it only as a salad dressing. It makes a great dipping sauce and a wonderful marinade. Apollonaire has been using it to baste thick New York strip steaks on the grill. Signolia's seems to be everywhere. The Martins have placed the product in about 40 Carolina locations, mostly wine shops and gourmet food stores, and distribution is increasing. We even saw it at the Green Market across from Reid's, Uptown, on a recent Saturday morning. During almost 30 years of marriage, Jerry and Eve Martin have dabbled in a host of entrepreneurial ventures. They owned a tile contracting business in West Virginia. Jerry sold Gulf Coast real estate in Southwest Florida. And during one painful chapter, they lost a small fortune - close to $1 million, they say - on a failed propane business. Now the Martins, each 53 and living near Waxhaw, have launched a new enterprise - blending and bottling a home made vinaigrette Eve created for her family.
